West Coast Whitebait Fry Up

Nothing beats fresh West Coast Whitebait fried up in some Westgold butter. This recipe really is next level.

Ingredients

250g West Coast whitebait

50g flour

5g flaky sea salt

freshly cracked black pepper to taste

50g Westgold Unsalted Butter

15g of chopped chives

1 lemon quartered

Edible flowers for garnish

Directions

Place salt and flour in a mixing bowl & tip the whitebait and its juices over the flour and mix, completely dusting the whitebait.

Heat a large heavy based frying pan over a medium-high temperature.

Add the butter, melt, then get the butter foamy and light brown.

Quickly add the whitebait and toast in the hot butter, move the whitebait in the pan so it cooks evenly.

When the white bait is golden brown, add the lemon quarters and toast the lemon in the white bait, season with the cracked pepper.

Serve!
